To be honest, besides Wah Kee’s Premium Big Prawn Noodles there is hardly any prawn noodle in Singapore that managed to really excite me. Sure, the prawns they use are big and fresh but I am not impressed by their tame prawn soup that seriously lacks that special kick. You know, the kind of flavor that once you taste it you can’t stop?
After trying all the purportedly popular and recommended prawn noodles in Singapore I have come to a conclusion that River South (Hoe Nam) Prawn Noodles is the best of the bunch. Hoe Nam’s prawn noodles is also not pretentious in the sense that the prawn soup itself is good enough, which does not require any huge prawns to make up for the ‘wow’ factor to impress the eaters.
And most of the prawn noodles here have a separate bottle of chilli powder to spice up the flavor. I always find myself putting a lot of the chilli powder into the noodles to compensate the lack of ‘kick’ and luckily it usually helps. But adding too much chilli powder would result in a too salty prawn noodle so better go easy on it.
After adding considerable amount of chilli powder then the overall taste is improved. Well, at least for me. For you I don’t know lol.
For $4 a bowl I really couldn’t complain on the prawns’ size. Although not impressively huge, at least they were de-shelled and tasted sea-fresh. The fall off the bone tender pork ribs were equally enjoyable too. Besides prawns and pork ribs you can actually have your prawn noodles topped with razor clams or abalones too. With a more expensive price of course.
