Guest Head Chef Jes Chew is now cooking at Elegantology Gallery & Restaurant. His specially created 3 course a la carte menu offers a series of colored dishes that could be paired with cocktails and in store fashion items.
Priced at RM150++ per pax and available for a limited time only, the exquisite dishes are prepared by using premium ingredients with a local twist.
Appetizers include Charcoal Smoked Salmon with marinated Ikura (shown above), Spicy Tuna with compressed watermelon and Bang Bang Chicken served with spicy peanut butter. The salmon would definitely be a safe bet while the spicy tuna is equally delectable with more exciting flavors.
A cocktail is served with every course. I am not going to show all of them but two of my personal favorites that day: Martell Cane (Martell VSOP shaken with sugar cane juice, triple sec and Ribena) and Havana Rambutan Mojito (Rambutans muddled with mint leaves, orange quarters, lychee juice and caramel)
Even for a non-alcohol drinker such as myself, I find all of them great tasting and easy to drink – so you might get tipsy faster than you think.
Soup was Pumpkin Soup cooked down with a crab and prawn stock then drizzled with white truffle oil for a touch of luxe. Each creamy sip was accompanied by delicate crab meat strands, truly wonderful and was gone in no time.
For main course you could opt for fish, pasta or steak. Personally I would recommend the Tiger Prawn Pasta because of its unique preparation that’s slightly fusion as well. Thin dried cuttlefish shreds are strewn through the pasta which I thought was a great move to give it an umami lift.
Cod fish on the other hand was sous vide cooked at 55°C for half an hour rendering it completely flaky and tender on the inside.
The grinded nestum coating gives the texture and we adored the silky turmeric sauce that we happily mopped up with the crispy croissant and eggplant. That being said, I felt the otak-otak cream was a bit out of place in this dish so it was largely left untouched.


Desserts wise there’s something for everyone. If you adore chocolate then the Varlhona Garnache with Mandarin Orange will be extremely satisfying. The ice cream potong jagung (corn) would appeal to those who have a penchant for durian, as it’s drizzled with a cream of Raja Kunyit and corn.
Last but not least, the Sirap Bandung 1.0 is a deconstruction of the beloved sirap bandung drink. As you can see, it’s worthy just for the immaculate presentation alone – it’s like a piece of art!
